    Roast carrots in olive oil at 200 °C for 25 minutes, until catching at the edges.

    About 6 min

    Sweat chopped onion, garlic and grated ginger in a heavy pot for 5 minutes, then add the roasted carrots and the broth.

    About 6 min

    Simmer 10 minutes, blitz to a silky purée and finish with coconut milk. Adjust salt and a pinch of pepper.
