    Heat the oven to 200 °C. Pat the chicken dry, rub with olive oil and salt, and stuff the cavity with one halved lemon and rosemary.

    Toss potatoes and garlic in olive oil and salt in a deep roasting tin. Sit the chicken on top.

    Roast for 1 hour 15 minutes, basting once halfway through, until the juices run clear at the thigh.

    Rest 10 minutes loosely tented in foil, then carve and serve with the lemon-soaked potatoes.
