Zucchini roll with crab sticks and cheese filling
Light, juicy, and protein-packed zucchini roll with a delicate filling of yogurt sauce, crab sticks, fresh tomatoes, and mozzarella. Perfectly suited for lunch, dinner, or a festive table.

Instructions

Grate the zucchini on a coarse grater, add salt, and leave for 10 minutes. Then squeeze out the excess liquid very thoroughly.

Grate the carrot on a fine or medium grater and mix it with the zucchini.

Add the eggs, rice flour, salt, and pepper. Mix well until smooth.

Line a baking sheet with silicone-treated parchment paper. Evenly spread the vegetable mixture in a layer about 5–7 mm thick.

Bake in an oven preheated to 180°C for 22–25 minutes, until the crust becomes firm and slightly golden around the edges.

Remove the crust, let it cool for 5–10 minutes, then carefully flip it over and peel off the parchment paper.
