Restaurant-quality at home. The marinade tip in the notes made all the difference — will cook again.

Great balance of protein and veg. I swapped chicken for tofu and it still came out fantastic.
Cook's notes
Be sure to cool the custard completely before mixing it with the curd (cottage cheese) — this will keep it thick and smooth.
Do not overbake the phyllo dough: a light golden crust is enough, otherwise it will become bitter.
The cake becomes tastiest 10–12 hours after preparation, once all the layers are well soaked.
If desired, you can add a bit of lemon zest or a few drops of vanilla extract to the cream for a richer aroma.
Store the cake in the refrigerator for up to 3 days in a closed container.
Tips & variations
Prep ahead
Roast the sweet potatoes and cook the grains the night before — the bowl comes together in minutes.
Make it vegetarian
Swap the chicken for grilled tofu or crispy chickpeas without losing the protein punch.
Store & reheat
Keeps for 3 days in an airtight container. Add the avocado fresh, just before serving.
Boost the flavour
A squeeze of lemon and a pinch of flaky salt right before eating brightens the whole bowl.
